Directions
  • Make Sauce

    Sauté chopped onion and bell pepper until soft. Add garlic and spices, cook for 1 minute. Add tomatoes and simmer for 15 minutes.

  • Poach Eggs

    Create wells in the sauce and crack eggs into them. Cover the pan and cook until the egg whites are set but yolks are still runny.

  • Serve

    Garnish with fresh cilantro or parsley. Serve directly from the pan with crusty bread for dipping.
