Directions
- Soak Bulgur
Place bulgur in a bowl. Pour boiling water over it, cover, and let sit for 20 minutes until water is absorbed. Fluff with a fork.
- Chop Vegetables
Finely chop the parsley, mint, tomatoes, and cucumber. The parsley should be the main ingredient.
- Combine and Dress
Combine bulgur and vegetables in a large bowl. Whisk together lemon juice, olive oil, and salt. Pour over salad and toss.
