- Make Cream
Separate eggs. Whip egg yolks with sugar until pale. Fold in mascarpone. In another bowl, whip egg whites to stiff peaks and fold into mascarpone mixture.
- Assemble
Quickly dip ladyfingers in cooled coffee and layer in a dish. Spread a layer of cream over them. Repeat.
- Chill
Dust the top with cocoa powder. Cover and refrigerate for at least 4 hours, preferably overnight.
